就是酒店或餐饮行业中受总经理委托并代替总经理处理客人对酒店、酒楼一切设备、设施、人员、服务等方面的投诉，监督各部门的运作，协调各部门的关系，保证酒店、酒楼以正常的秩序向顾客提供优质服务的中层管理人员。他们是酒店、酒楼的神经中枢，是沟通酒店、酒楼和客人之间的桥梁，大致的工作范围包括：
